Breakfast
Apple Cinnamon
Pancakes
1/2 cup of flour
1/2 cup of whole wheat
flour
1/4 of organic sugar
1 tsp of baking powder
1/2 tsp of baking soda
1/4 tsp of sea salt
2 egg yolks (from
saved yolks separated from whites)
1 1/4 cup of fat-free
milk
2 tsp of olive oil
1 tsp of cinnamon
1 tsp of vanilla
extract
1 cup of diced apple
Directions
Step 1: Mix all the dry ingredients in a medium size
bowl and set to the side. In a separate bowl, combine egg, buttermilk, oil and
vanilla. In a separate bowl, combine the milk, yolks, vanilla extract, and
olive oil. Mix together the dry and wet ingredients and then stir in the diced
apple.
Step 2: Add some olive oil to a pan and allow to get
hot. Put 3 tablespoons of the pancake mixture in the hot pan and cook for 3
minutes on both sides.
These pancakes can be
eaten by themselves or with sugar-free syrup.
