2 chicken breast,
cubed
2 onions, cut into
eighths
5 cloves of garlic,
chopped
2 tablespoons of curry
powder
4 cups of chicken
broth
2 cups of water
1 1/2 cups of lentils
2 cups
of Roma tomatoes, diced
Directions:
Step 1: Prepare the onions and the garlic. Add some
olive oil to a pot and allow to get hot. Add the onions and saute for 2
minutes. While the onions are cooking, cube the chicken breast. Once, the
onions are clear, add the chopped garlic and cook for 1 minute.
Step 2: Add the chicken and let it cook for 10
minutes, occasionally stirring. Add the curry and mix. Then, add all the rest
of the ingredients. Cover and simmer for 50 minutes, stirring occasionally.
Uncover and let sit for 10 minutes to cool.
